Open the Gluten Free NoOodle Package, Empty contents into colander, Rinse under cold water for one minute, Snip or cut NoOodles to desired length, Place NoOodles in non-stick skillet and "dry fry" over medium heat until all liquid evaporates, Top or toss with your favorite sauce, sauteed vegetables, grilled chicken, etc..., Cook until flavors meld and dish is hot, Refrigerate leftovers promptly.

Chicken Pesto Salad NoOodle

Ingredients:

  • 4 oz chicken breast
  • 2 tbsp homemade pesto (see recipe)
  • 1 oz parmesan - shaved
  • 1 tbsp olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 8 ounces NoOodle
  • Pesto

Instructions:

Place olive oil in pan and add chicken. Grill to desired temperature. Set aside.

Toss NoOodles in pesto. Put NoOodles on plate, cut chicken into strips and place on top, then top with parmesan cheese. Serve and enjoy!

Chicken Carbonara NoOodle

Ingredients:

  • 4 oz chicken breast
  • 1 oz bacon - chopped
  • 1 oz onions - chopped
  • 1 oz peas
  • 1 tbsp olive oil
  • 1/4 cup low fat cream
  • 2 oz white wine
  • 1 oz parmesan cheese
  • 8 ounces NoOodle

Instructions:

Marinate chicken in 1/2 tbsp olive oil. Grill to medium rare and set aside.

Heat 1/2 tbsp olive oil over medium heat in large skillet. Add onions, peas and low fat cream and simmer for 3 minutes. Add chicken and bacon and NoOodles and sauté for 3 minutes while stirring (mix well).

Remove from heat, sprinkle parmesan cheese on top, serve and enjoy.

Beefsteak Tomato Caprese

NoOodle

Ingredients:

  • 1 medium size tomato
  • 1 oz roasted tomatoes
  • 3 oz onions (Sliced)
  • 2 oz low Fat Mozzarella Cheese
  • 1.5 oz fresh Basil
  • 2 tbsp olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 6 ounces NoOodle

Instructions:

Slice tomato (save juice) and red onion and stack. Top with sliced mozzarella and sprinkle with a little basil.

Next, toss NoOodles, roasted tomatoes, remaining basil, cubed mozzarella and juice from the sliced tomato.

Top with a pinch of salt and pepper, serve and enjoy!

Chicken Vegetable NoOodle Soup

Ingredients:

  • Chicken
  • Chicken Broth
  • Celery
  • Carrots
  • Onions
  • 8 ounces NoOodle

Instructions:

Serve and enjoy!

Eggplant Parmesan NoOodle

Ingredients:

  • 5 oz eggplant - sliced
  • 1 cup tomato sauce
  • 1 oz mozzarella cheese
  • 1 tbsp olive oil
  • 2 eggs - beaten
  • 1 oz breadcrumbs
  • 8 ounces NoOodle

Instructions:

Place sliced eggplant in egg batter then dip into breadcrumbs. Place olive oil in casserole dish and bake in 400° preheated oven for 10 minutes then flip over eggplant slices and bake for another 10 minutes.

Remove eggplant from dish and then place back in dish layering eggplant and cheese alternately. Pour tomato sauce over stack and bake in oven for another 10 minutes.

Remove from oven, place on top of bed of heated NoOodles, serve and enjoy!

Serves 1-2

Ahi Tuna Salad NoOodle

Ingredients:

  • 5 oz ahi tuna
  • 2 slices pineapple
  • 1.5 oz fresh arugula
  • 1 oz blackened seasoning
  • 1.5 oz Wasabi - (see below)
  • 1 oz balsamic vinaigrette (see below)
  • 1/2 tbsp olive oil
  • 4 ounces NoOodle

Wasabi Aioli (4 servings)

  • 1 tbsp light mayonnaise
  • 1 pinch Wasabi powder
  • 1 tsp water

Balsamic Vinaigrette (4 servings)

  • 1 oz balsamic vinegar
  • 1 tbsp extra virgin olive oil
  • 2.5 oz vegetable oil
  • 1/2 tsp dijon mustard
  • 1 pinch Kosher salt
  • 1 pinch black pepper

Instructions:

To Sear tuna, season raw tuna with blackened spices.

Heat olive oil in a pan until sizzling. Place tuna in hot oil and sear on both sides for 1 minute. Remove from pan.

Toss arugula and balsamic vinaigrette.

Layer both slices of pineapple, NoOodle and then rolled sliced tuna (see photo).

Drizzle Wasabi Aioli on top

Balsamic Vinaigrette & Wasabi Aioli

Make balsamic vinaigrette and wasabi aioli ahead of time by mixing each set of ingredients well.

Serve and enjoy!

Grilled Shrimp NoOodle

Ingredients:

  • 4 oz Shrimp
  • 1 oz roasted tomatoes
  • 1 oz roasted red peppers
  • 1 oz onions - sliced
  • 1 tbsp olive oil
  • 1 tsp fresh garlic
  • 1 tbsp fresh basil
  • 2 tbsp white wine
  • 1 pinch Kosher salt
  • 8 ounces NoOodle

Instructions:

Heat olive oil over medium heat in large skillet. Add fresh garlic and and shrimp, sauté for 3 minutes.

Add tomatoes, peppers and white wine, and sauté for 5 minute while stirring (until well mixed and hot).

Add NoOodles and sauté for 2 more minutes.

Remove from heat, sprinkle fresh basil on top, serve and enjoy.

Banana Chocolate Cream NoOodle

Ingredients:

  • 1 cup no fat yogurt
  • 1 tbsp all natural honey
  • 1/2 banana sliced thin
  • 1 tbsp dark chocolate - shaved
  • 4 ounces NoOodle

Instructions:

Mix yogurt and honey.

Chop NoOodles into smaller pieces and mix together with yogurt and honey.

Add banana slices. Sprinkle with chocolate shavings.

Serve and enjoy!
