As a small child, I grew up in Australia, raised by my very Dutch parents, of whom my mother was a nurse. Every night she prepared fresh vegetables with a lean protein followed by yogurt or fresh fruit for desert. Breakfast was home made yogurt, eggs, fresh fruit or porridge and lunch was always a protein filled sandwich made on whole wheat bread with fresh fruit. We snacked only on dried fruit and nuts or fresh fruit and never saw a can/tin in the house.
On Friday nights we were allowed a very special treat: to watch a film on television and my father would treat us to a home made pastry from a European bakery that made fresh fruit tarts, ricotta filled Cannoli, French pastries and delicious breads. On a regular basis my mother inquired as to the regularity of our colons! If she suspected a lag we were promptly made to eat a piece of stone fruit, a bowl of raw bran, a drink of cod liver oil or some other more severe remedy that she believed would restore our regularity. She insisted that to stay healthy we had to empty our colons at least once a day.
It has become very clear that her philosophy is correct. Fiber and active probiotic culture is essential to a healthy immune system and an overall feeling of well being.

How to prevent the disharmony and disease caused by acidosis
I remember being amazed in 5th grade chemistry when I learned that all solutions were either acid or alkaline and that litmus paper would change to red (if acidic) or to blue (if alkaline) indicating the “potential of hydrogen” or pH.
The most confusing part was in realizing that the pH scale goes from 0 to 14 with 14 being most alkaline, 7 being neutral, and 0 being the most acidic.
These days there is much discussion about acid/alkaline balance in our body suggesting that an acidic environment causes decrease in cellular function and leads to disease. You may test the level of your pH by using a litmus paper stick on saliva or urine. In a healthy stomach the acidic fluid so important in the digestion of protein, should have a pH of 1, while our blood should be slightly alkaline at a pH of around 7.4. When you measure baking soda in water it is completely alkaline with a pH of 14 while water is neutral at 7 and wine more acidic at 3.5.
If what I read is true it seems that maintaining a balance in favor of a more alkaline environment can prevent the growth of many diseases and even perhaps the duplication of cancer.

Constant low grade infection can be responsible for more serious diseases
