Granola keto-bread recipe

Most of us are sensitive to gluten which creates inflammation in our digestive system, weight gain, bloating, gas and stomach pain.

But we all love bread! Here is my recipe for a delicious, high fibre, gluten free keto bread that is especially prevalent in my kitchen when I have over ripe bananas and or too many eggs!

I generally make it in a loaf tin but you can reduce the cook time and place it in a shallow baking dish and cut it into bars. My son loves to toast it.

Add granola, nuts, seeds, dried fruits and raw oats to make up about 6 cups. Add 2 cups of keto flour; I use almond.

Mix in 6 mashed bananas or whatever you have and add 6 whole eggs. It should have the consistency of thick cake mix that is not too liquid. If so add more granola or dry ingredients.

Mix all ingredients well. Place the mixture in a buttered pan for 35 mins at 350°F.

Serve hot with butter.
