Homemade Fajitas

After years in Santa Fe, my kids fell in love with this simple yet delicious homemade fajitas recipe, and today, I’m sharing it with you!
A vibrant, hands-on dinner that’s all about flavor, fun, and sharing.

Cook time: 30-35 min
Serves: 10


For the veggie mix:

  • ¼ cup avocado oil

  • 2 large red onions, chopped

  • 4 garlic cloves, finely chopped

  • 2 jalapeños, finely chopped (remove seeds for less heat)

  • 2 red bell peppers, chopped

  • 2 yellow bell peppers, chopped

  • 10 green tomatillos, chopped

  • 2 bunches of cilantro (stems and leaves separated)

  • Your favorite fajita spices (like cumin, smoked paprika, chili powder)

  • Salt and pepper, to taste

For the chicken:

  • ¼ cup avocado oil

  • 10 chicken breasts (1 per person), cut into 1-inch bites or long strips

To serve:

  • Warm tortillas

  • Sour cream

  • Chopped cilantro leaves (from above)

  • Grated cheese

  • Salsa

  • Guacamole

  • Lime wedges (optional)

Instructions

Make the veggie base:

  • Heat ¼ cup of avocado oil in a large saucepan.

  • Add onions, garlic, and jalapeños. Sauté over medium heat until the onions are soft and translucent.

  • Stir in the bell peppers, tomatillos, and cilantro stems.

  • Season with your favorite spices, salt, and pepper.

  • Cook for about 20 minutes, stirring occasionally, until the veggies are tender and juicy.

  • Set the mixture aside.

Prepare the chicken:

  • Heat another ¼ cup of avocado oil in a large pan.

  • Sauté the chicken pieces until golden and cooked through.

  • Return the veggie mixture to the pan, toss everything together, and heat until warmed through.

Serve it all up:

  • Warm your tortillas.

  • Set the table with sour cream, grated cheese, salsa, guacamole, and cilantro leaves.

  • Let everyone build their own perfect fajita — full of flavor, color, and crunch
