Simple Green Purée
I was recently asked to share my recipe for what I like to call “Green Spinach Mush.” I make it with fresh ingredients from my garden — and it just happens to be a simple, nourishing way to use up all those leafy greens.

Cook time: 15 min
Serves: 2–4
ingredients
2 tbsp olive oil
2–3 cloves garlic, peeled and crushed
1 medium onion, chopped
6–8 cups mixed greens (kale, spinach, lettuce, cilantro — whatever you have!)
Salt and pepper, to taste
Optional: a splash of lemon juice or veggie broth for blending
Instructions
In a deep saucepan, heat olive oil over medium heat.
Add garlic and onion. Sauté for 3–4 minutes until fragrant and soft.
Add all your washed greens — don’t worry if the pot looks full, they’ll cook down quickly.
Cover with a lid and let the greens steam and wilt, about 7–10 minutes. Stir occasionally.
Once tender and reduced in volume, remove from heat.
Let cool slightly, then transfer to a blender or use an immersion blender to purée.
Add a little water, broth, or lemon juice if needed to reach your desired consistency.
Season with salt and pepper to taste.
How to Serve It
As a light soup, topped with herbs or a swirl of coconut milk
As a side dish, alongside grains, beans, or roasted veggies
As a creamy base for nourish bowls or morning toast
This green purée is comforting, deeply satisfying, and full of fresh flavor. It’s perfect for when you want something simple, nourishing, and good-for-you — without overthinking it.
